Spice Banana, Date & Walnut Muffins

These muffins are absolutely delicious and are made from scratch with no nasty ingredients, are gluten & Dairy-free - Enjoy :) 


Ingredients 

  • Coconut Oil (to grease the muffin tray)
  • 3 free-range eggs
  • 3/4 cup rice milk, nut milk or coconut milk
  • 1/2 cup raw honey
  • 2 tbsp coconut sugar
  • 1/2 tsp himalayan rock salt 
  • 2 tsp vanilla extract
  • 2 ripe bananas
  • 1/2 cup coconut flour
  • 2 tsp baking powder
  • 1 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 cup finely chopped dates
  • 1 cup roughly chopped walnuts 
Instructions 
  1. Preheat oven to 180 degrees and grease the muffin tray 
  2. In a bowl whisk the eggs and milk, add the honey, coconut sugar, salt and vanilla extract until well combined
  3. In a separate bowl mash the banana with a fork, then add to the mixture, mixing until smooth
  4. Sift the flour, baking powder, cinnamon and nutmeg and stir through
  5. Fold in the dates and walnuts, then spoon into the muffin tray until half full
  6. Bake for 35 minutes or until golden brown.  Remove from the oven and set aside for 10 minutes until cool then turn out onto a wire rack.
