These muffins are absolutely delicious and are made from scratch with no nasty ingredients, are gluten & Dairy-free - Enjoy :)
Ingredients
- Coconut Oil (to grease the muffin tray)
- 3 free-range eggs
- 3/4 cup rice milk, nut milk or coconut milk
- 1/2 cup raw honey
- 2 tbsp coconut sugar
- 1/2 tsp himalayan rock salt
- 2 tsp vanilla extract
- 2 ripe bananas
- 1/2 cup coconut flour
- 2 tsp baking powder
- 1 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1 cup finely chopped dates
- 1 cup roughly chopped walnuts
Instructions
- Preheat oven to 180 degrees and grease the muffin tray
- In a bowl whisk the eggs and milk, add the honey, coconut sugar, salt and vanilla extract until well combined
- In a separate bowl mash the banana with a fork, then add to the mixture, mixing until smooth
- Sift the flour, baking powder, cinnamon and nutmeg and stir through
- Fold in the dates and walnuts, then spoon into the muffin tray until half full
- Bake for 35 minutes or until golden brown. Remove from the oven and set aside for 10 minutes until cool then turn out onto a wire rack.
