Ingredients
CRUST
- 1 cup organic 100% shredded coconut
- 1 1/2 cup raw macadamia nuts
- 1/2 cup almond meal
- 1/2 tsp himalayan salt
- 1/2 cup pitted dates (raw)
Instructions
- Place the coconut, almond meal, salt and nuts into a food processor and blend until coarsely ground
- Add the dates and mix until it resembles coarse crumbs that is starting to stick together (Be sure not to over-process)
- Line the bottom of a round cake tin (Spring form) and line with baking paper, pour half of the mixture into the tin and spread evenly then and press down firmly
- Add the remainder and distribute evenly, pressing down so some of the crumble goes up the cake tin, Sit in the fridge whilst making the filling
Ingredients
FILLING
- 1/4 cup pitted dates
- 1/4 cup raw honey (organic is best)
- 1/2 tsp vanilla extract
- 1 1/2 Ripe Avocado
- 1 Ripe Banana
- 2 tbls Cacao Powder
- 1/4 Cup Filtered Water
- 1 tbls coconut oil
Instructions
- Place the dates, honey and vanilla into the food processor and blend until smooth
- Add the avocado, banana, coconut oil and cacao and process until creamy
- Add the water and process briefly
- Get the Base out of the fridge and scrape the filling onto the base with a spatula, spreading evenly then refrigerate for 2-3 hours, until set
- Add some extra berries on top when serving
Can be served chilled, at room temperature or frozen
